The sausage processing line from Baiyu Group is a comprehensive, state-of-the-art solution designed for efficient and hygienic sausage production. Starting with high-quality raw meat, the process includes grinding, marinating, mixing, chopping, filling, and smoking, followed by rapid cooling to ensure safety and quality. Advanced metal detection systems then screen for contaminants, and precise labeling machines provide essential product information. Finally, the sausages are stored in controlled conditions to maintain their freshness. Sausage product process line

Sausage product process as follow :
Frozen raw meat → Defrosting  → ground meat → bowl cutter  → filler → cooked and sterilized → cooling → finished product → Metal Detection → labeling → storage.
(1) Defrosting: Use meat that meets national health standards.

(2) Optional: After thawing pork, remove the remaining skin, broken bones, lymph and connective tissue.

(3) Mincing: Use a meat grinder to grind the meat, and control the temperature of the meat not to be higher than 10°C.

(4) Chopping: When chopping, the speed should be low and then high. The temperature should not exceed 10°C during the chopping process. The minced meat should be uniform in color and moderate in viscosity.

(5) Enema: Use a continuous vacuum enema ligation machine to pour the chopped meat into the red PVD  casing, and ligate with aluminum wire.

(6) Cooked and sterilized: the cooked ham sausage should be cooked and sterilized as soon as possible, generally not more than half an hour. Put the well-packaged ham sausages into the sterilization basket in layers, then push them into the sterilization pot, seal the lid, and start the sterilization.

(7)Cooling: After cooking and smoking, the sausages undergo a rapid cooling process using industrial cooling systems to quickly lower their temperature, ensuring safety, maintaining quality, and preventing bacterial growth before packaging.

(8)Metal Detection:During the metal detection step, sausages pass through a specialized metal detector to ensure that no metal contaminants are present. This crucial step safeguards consumer health and complies with food safety regulations by detecting and removing any potential metal fragments from the production line before packaging.

(9) Labeling: Following the metal detection step, the sausages proceed to the labeling stage. Here, automated labeling machines precisely apply labels to each package, providing essential information such as product name, ingredients, nutritional facts, expiration date, and barcodes. This ensures compliance with labeling regulations and helps consumers make informed choices.

(10)Storage: As the final step in the production process, the sausages are moved to a controlled storage area. This facility maintains optimal temperature and humidity levels to preserve the freshness and quality of the sausages. Proper storage ensures that the product remains safe and delicious until it reaches consumers
